Reuben Salad with Haskap Vinaigrette

An instant hit for lunch and a tangy twist on a classic. Serve with a fresh, crusty roll!

  • Reuben Salad Ingredients:
    1 head romaine lettuce, chopped or mixed greens
    2 tbsp green onions, chopped or shallot, minced
    3/4 cup swiss cheese shredded or diced
    1/2 lb corned beef, shredded or diced

    Haskap Vinaigrette Ingredients:
    2/3 cup olive or vegetable oil
    1/4 cup balsamic vinegar
    4 tbsp Haskap Highland Orchards Haskap Juice Drink
    2 tbsp honey
    1/2 tsp salt
    1/4 tsp pepper

    Reuben Salad Instructions:

    1. Toss in a bowl or layer on two plates for serving.

    Haskap Vinaigrette Instructions:

    1. Combine all vinaigrette ingredients in a jar and shake until emulsified.

    2. Refrigerate till serving.

    3. Serve over salad. Top with a sprinkle of Haskap dried berries, seeds, and/or croutons (optional).
