Haskap Chia Yogurt Parfait

Breakfast is the meal that fuels us. Add Haskap to your plain Greek yogurt for tartness and depth of flavour, plus a boost of antioxidants in the morning!

  • Ingredients:
    1/4 cup chia seeds, soaked in water overnight. (Chia seeds don’t need to be soaked; however, they will expand during digestion and can cause dehydration, so be sure to drink lots of water if you don’t soak them)
    1 cup plain Greek yogurt
    2 tbsp Haskap juice
    1 tbsp honey, drizzled over top of parfait.
    Fresh fruit. (In this recipe, I used pears and peaches to stand out against the purple colour of Haskap mixed yogurt)

    N.B. If you're packing your lunch, lay the chia seeds against the yogurt. This will allow them to absorb moisture throughout the day.

    1. Mix the yogurt and haskap together. (This is delicious, so feel free to just eat it!)

    2. Now, we need to layer...
    Haskap yogurt
    Chia seeds
    Fruit
    Honey drizzle
    Repeat the layers until you run out of space and enjoy!
