Reuben Salad with Haskap Vinaigrette

An instant hit for lunch, serve with a crusty roll!

Servings: 4



Reuben Salad Ingredients:

  • 1 head romaine lettuce, chopped or mixed greens 
  • 2 tbsp green onions, chopped or shallot, minced 
  • 3/4 cup swiss cheese shredded or diced
  • 1/2 lb corned beef, shredded or diced


Haskap Vinaigrette:

  • 2/3 cup olive or vegetable oil
  • 1/4 cup balsamic vinegar
  • 4 tbsp Haskap Highland Orchards Haskap Juice Drink
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp pepper



Reuben Salad

  • Toss in a bowl or layer on two plates for serving.

Haskap Vinaigrette

  • Combine all vinaigrette ingredients in a jar, shake until emulsified. Refrigerate till serving.
  • Serve over salad, top with a sprinkle of Haskap dried berries, seeds, and/or crotons.
