INGREDIENTS
Reuben Salad Ingredients:
- 1 head romaine lettuce, chopped or mixed greens
- 2 tbsp green onions, chopped or shallot, minced
- 3/4 cup swiss cheese shredded or diced
- 1/2 lb corned beef, shredded or diced
Haskap Vinaigrette:
- 2/3 cup olive or vegetable oil
- 1/4 cup balsamic vinegar
- 4 tbsp Haskap Highland Orchards Haskap Juice Drink
- 2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp pepper
INSTRUCTIONS

Toss in a bowl or layer on two plates for serving.
Haskap Vinaigrette

Combine all vinaigrette ingredients in a jar, shake until emulsified. Refrigerate till serving.

Serve over salad, top with a sprinkle of Haskap dried berries, seeds, and/or crotons.
