
Haskap White Chocolate Fudge
Delightful lunch box treats!
Ingredients
- 100 g package Haskap Highland Orchards™ Haskap Dried Berries
- 11 oz quality white chocolate chips
- 1/3 cup powdered sugar
- 5 tbsp butter, salted
- 3 tbsp heavy cream
- 1 tbsp vanilla extract
- 1/4 tsp sea salt
Instructions
- Course chop dried Haskap berries and set aside.
- Sift powdered sugar to ensure it is a fine powder free of clumps. Set aside.
- In a medium double boiler saucepan over low to medium heat, melt butter and heavy cream. Then stir in vanilla and salt.
- To this melted mixture, add white chocolate chips, stirring as needed until the chocolate is melted. Keep the heat low; do not overheat the chocolate mixture. If you are using a thermometer, the mixture should be about 100°F (or sufficiently comfortable to touch with a finger).
- Remove from heat and gently stir in powdered sugar and chopped Haskap berries.
- Turn into a 6 x 9” casserole dish and set aside to cool. When cool cut into bars or squares to serve.
- Store in an airtight container in the refrigerator for up to two weeks.
